    Microwave Chocolate Outrage Snack Cake

    List of Ingredients





    1 1/3 c quick or old fashioned oats, uncooked
    1 c butter or margarine (2 sticks)
    1 c sugar *
    1/2 c flour
    2 eggs
    1/2 c pecans, chopped, optional**
    1 tsp vanilla
    12 oz (2 c) semi-sweet chocolate chips, divided


    Recipe




    Combine everything except chocolate chips and mix at medium speed of an electric mixer for 3 minutes. Mixture should be light and creamy.
    Add 1 c chocolate chips and stir.
    Spread batter in a lightly greased 8 inch square microwave safe baking dish.
    Cover with waxed paper.
    Microwave on high for 8 to 9 minutes or until the top of the cake appears dry and/or the bottom of the cake is an even color. IF your oven does not have a turn table, stop after 4 minutes and turn the dish one quarter turn, then continue with the remaining baking time. Remove from microwave.
    Sprinkle on the other 1 c chocolate chips immediately, allow to melt for about 10 minutes, then carefully spread.
    Cool on the countertop.
    To set the chocolate, refrigerate for 10 minutes.
    Slice and serve.
    8 servings.

    NOTES:
    I used old fashioned oats, real butter large eggs.
    I did use pecans.
    *The original recipe called for 1 c firmly packed brown sugar.
    **Original recipe called for walnuts, not pecans.

    Baking time - I baked for 8 minutes but next time will reduce to 7. My oven is 1100 watts. The recipe did not state the oven strength. I did not have to stop and turn my cake as my oven has a turn table.
    We cut this into 9 pieces rather than 8.
