Chocolate Banana Cookies

Maida Heater's Cookies


Recipe Introduction


These are a cake like cookie, thick and soft.


List of Ingredients




1 c semisweet chocolate chips
2 1/4 c sifted flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 c mashed bananas
10 2/3 tbsp butter
1/2 tsp vanilla
1 c sugar
2 eggs
6 oz chopped walnuts, opt

Recipe



Melt chocolate; stir till smooth then set aside to cool.
Sift dry ingredients together; set aside
beat banana in small mixing bowl
In a large mixing bowl, beat butter; add sugar and vanilla and mix well.
One at a time, add eggs and mix well.
Alternately add the sifted dry ingredients with the cooled chocolate and bananas.
Stir in nuts, if using.

Scoop large teaspoonfuls onto cookie sheets.
Bake at 400 for 12 to 14 minutes or until the top springs back when lightly pressed.
Cool on wire racks.

4 to 5 dozen cookies

NOTES:
The cookies were a little bland in flavor so I put a chocolate glaze on them.

I used unsalted butter and large eggs.
Baking time was 13 minutes.
