Kansas Sunflower Cookies

These are buttery and delicious - and addictive!
I will post the recipe as written and add my adjustments in a note at the end.
List of Ingredients
1 1/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1 c butter, softened to room temperature
1 c sugar
1 c packed brown sugar
2 eggs
1 tsp vanilla
2 c quick oats
1 c shredded coconut
1 c shelled sunflower seedsRecipe
Combine flour, baking soda adn baking powder. Set aside.
Using an electric mixer, beat butter for 30 seconds.
Scrape bowl.
Add both sugars and beat until well mixed.
Add eggs and vanilla, mix well.
Add flour and mix until combined.
Add oats, coconut, and sunflower seeds.
Line cookie sheets with foil and lightly spray with oil.
Drop dough by rounded tablespoons, 3 inches apart.
Bake at 375 for 8 or 9 minutes or until lightly browned.
Let cool on the sheet for 5 minutes.
Remove to wire racks and cool completely.
Makes 60 cookies.
NOTES:
I used 1/2 c butter and 1/2 c butter flavored Crisco.
I used about 2 c granulated sugar and no brown sugar. This seemed a lot of sugar to me, so I didn't quite fill to the 2 cup mark, maybe 2 tbsp less.
Be sure to use quick oats.
I chilled the dough for 30 minutes before baking.
I lined some sheets with sprayed foil as directed, but baked others on parchment paper. I really preferred the cookies baked on parchment although I had to bake them 1 or 2 additional minutes.
