    My family really likes these moist, yummy cookies.

    List of Ingredients





    4 c flour
    2 c oats (quick or old fashioned)
    2 tsp baking soda
    2 tsp cinnamon
    1 tsp salt
    1 1/2 c butter, softened
    2 c firmly packed brown sugar
    1 c sugar
    1 egg
    1 tsp vanilla
    16 oz Libby's solid pack pumpkin
    1 c semi-sweet chocolate chips

    Recipe





    Preheat to 350.
    Combine dry ingredients; mix and set aside.
    Cream butter; add sugars gradually and beat until light and fluffy.
    Add egg and vanilla; mix well.
    Alternately add dry ingredients and pumpkin, mixing well after each addition. Be sure to begin and end with dry ingredients.
    Add chocolate chips and stir.

    For each cookie, drop 1/4 c dough onto lightly greased cookie sheet. (if desired, shape as pumpkins)
    bake for 20 to 25 minutes. or until cookies are firm and lightly browned.
    Remove and cool on racks.
    If desired, decorate.
    Makes about 32 cookies.
    If desired, substitute raisins for chocolate chips.
    Note: dough may be frozen in air tight container. Thaw in refrigerator and bake as directed.

    Notes:
    I use whatever oats I have on hand, both work well.
    I use Chinese cassia cinnamon, unsalted butter, a large egg and I substitute granulated sugar for the brown sugar.
