    Wellesley Fudge Cake

    List of Ingredients




    4 oz unsweetened chocolate
    1 3/4 c sugar, divided
    1/2 c water
    1 2/3 c flour
    1 tsp baking soda
    1/4 tsp salt
    1/2 c butter or margarine, softened
    3 eggs
    3/4 c milk
    1 tsp vanilla

    Recipe



    Preheat to 350. Grease and flour 2 - 9 inch round pans.

    In a large bowl, combine chocolate squares, 1/2 c sugar and the water.
    Microwave on high for 1 to 2 minutes, or until chocolate is almost melted.
    Stir halfway through the heating.
    Stir until chocolate is melted. Cool to lukewarm.

    In a mixer, beat butter and the rest of the sugar (1 1/4 c) until light and fluffy.
    Add eggs, one at a time, beating well after each.

    Combine flour, baking soda and salt.
    Alternately add flour mixture and milk to the butter/egg batter.
    Beat each addition until smooth.
    Begin and end additions with dry ingredients.

    Add melted chocolate mixture and vanilla.
    Pour into prepared pans.

    Bake 30 to 35 minutes, or until the cake springs back when lightly touched.
    Cool in pans for 10 minutes. Remove to wire racks and cool completely.

    Frost as desired. Makes 12 servings.

    NOTES:
    I used real butter.
    I baked the cake 35 minutes.
