    Apple Cinnamon Cheesecake

    Flavor of cheesecake improves after sitting overnight.
    This is a quick and simple recipe.

    List of Ingredients




    Cheesecake:
    16 oz cream cheese, softened
    1/2 c sugar
    1 tsp vanilla
    2 eggs

    1 graham cracker crust, 9 inch

    Topping:
    2 medium apples, tart variety
    1 tbsp water
    2 tbsp sugar
    1/4 tsp cinnamon

    Recipe



    Mix the cream cheese, sugar and vanilla at medium speed of an electric mixer until well blended.
    Preheat to 350.
    One at a time, add eggs and mix just until blended.
    Do not overbeat after adding eggs.
    Pour into crust.

    Bake for 50 minutes or until center is almost set.
    Cool. Refrigerate for at least 3 hours or overnight.

    Peel, core and slice apples.
    Cook in the 1 tbsp water for about 4 minutes, or until tender. (I cooked about 6 minutes)
    Stir in sugar and cinnamon, mixing well.
    Spoon over chilled cheesecake.

    NOTES:
    I made a graham cracker crust but a prepared crust would work.
    I used large eggs.
    It is important NOT to over mix.

    The flavor of the cheesecake was much improved after 24 hours.

    I ended up making 2 batches of topping for the cheesecake and added more cinnamon the second time.

    I think this topping would be good on french toast, waffles or pancakes too.
