Creamy Baked Cheesecake

Recipe Introduction
A very easy, basic cheesecake recipe.
List of Ingredients
1/3 c butter, melted
1 1/4 c graham crackers
1/4 c sugar
16 oz cream cheese, softened
14 oz sweetened condensed milk
3 eggs
1/4 c lemon juice
8 oz sour cream

Raspberry Topping, if desired
10 oz pkg frozen red rapsberries
1/4 c red raspberry jam
1 tbsp flour*
Recipe
Preheat to 300.
Combine butter, graham cracker crumbs and sugar. Mix.
Press crumb mixture onto the bottom of a 9-inch springform pan. Set aside.
Beat the cream cheese until fluffy in a large mixing bowl, scraping sides frequently.
Gradually add in the sweetened condensed milk and beat until mixture is smooth.
Add the eggs and lemon juice. Mix well.
Pour cheese mixture into the prepared springform pan.
Bake at 300 for 50 to 55 minutes or until set.
Top with sour cream and beat for 5 additional minutes.
Cool then chill.
If desired, serve wtih raspberry topping (recipe follows).
Refrigerate any leftovers.
Raspberry Topping:
Allow red raspberries to thaw.
Drain raspberries and reserve 2/3 c of syrup.
In a samll saucepan, combine the 2/3 c syrup, jam and flour.
Cook and stir until the mixture is slightly thickened and clear.
Cool.
STir in raspberries and spread over cheesecake or serve on the side.
Makes about 1 1/2 c.
