    Blueberry Torte Delight

    List of Ingredients

    Blueberry Torte Delight

    Crust:
    1 1/2 c flour
    3/4 c butter or margarine
    1 1/2 c chopped pecans

    Filling:
    1 - 8 oz pkg cream cheese, softened
    1/2 to 1 c sugar, depending on taste
    2 eggs, beaten
    2 tsp lemon juice
    1 tsp vanilla

    Topping:
    2 c blueberries, if frozen, allow to thaw
    1 c sugar
    1/4 c water
    1 tbsp flour or cornstarch

    Whipped cream for top



    Recipe



    Preheat oven to 350.

    Put all filling ingredients in a mixing bowl and allow to come to room temperature while preparing crust.

    Crust: Mix flour and butter in a mixing bowl until looks like crumbs. Add pecans and stir.

    Press crust into gerased baking pan (9 x 13).

    Bake for 5 minutes.

    While the crust bakes, mix filling, beating until smooth.

    After crust has baked for 5 minutes, remove from oven, top with cream cheese filling.

    Return to oven and bake 20 minutes.

    Remove from oven and allow to cool.

    In a saucepan, combine blueberries, sugar, water, and flour. Stirring constantly, cook over medium heat until
    thickened. Allow to cool 3 minutes, then pour over cooled mixture.

    Refrigerated for at least 1 hour before serving.

    Top with whipped cream and serve. 15 servings.
