2 large eggs
1/2 c sugar
1 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground ginger, optional
1/4 tsp ground cloves, Optional
15 oz can pumpkin
12 oz can fat free evaporated milk
Recipe
Preheat to 350.
Lightly grease a 7 x 11 baking dish.
Beat eggs till frothy.
Add pumpkin and mix.
Add sugar, cinnamon, salt, ginger and cinnamon; mix well.
Add evaporated milk and mix.
Pour into baking dish.
Bake for 40 minutes or until center is wiggles slightly.
cool on wire rack then refrigerate.
12 servings.
Notes:
I used a rounded teaspoon of cinnamon and fat free skim milk.
I baked for 45 minutes and tested as for pumpkin pie.
