Blueberry Pancakes

These are low in salt but great flavor.
List of Ingredients
1 c flour
2 tbsp sugar
2 tsp baking powder
1/8 tsp cinnamon
3/4 c + 2 tbsp fat free milk
1 egg or equivalent egg substitute
2 tsp veggie oil
1/4 tsp vanilla
1/2 c fresh blueberries*
Recipe
Sift together flour, sugar, baking powder and cinnamon.
Add milk, egg, oil and vanilla.
Stir to mix. Batter should be lumpy.
Gently stir in blueberries
Cook on hot griddle and serve.
NOTES:
I used a large egg and canola oil.
Blueberries may be omitted if plain pancakes are desired.
Makes 12 pancakes.
