    Kentucky Style Country Ham

    1 country ham
    water

    Recipe





    Scrub the ham well. Be sure to note the weight of the ham.
    Place in a large kettle o COLDf water, with the water covering the ham.
    Allow to soak overnight.
    In the morning, drain.
    Refill with fresh, cold water.
    Bring to a boil, then reduce heat to a simmer.
    Simmer for 20 to 25 minutes PER POUND of ham.
    Allow ham to cool in the water it was cooked in.
    When cooled, skim fat from the top of the water but save to use as seasoning.
    Remove ham from water, trim skin and fat, reserving some fat.
    Place in a baking dish and, if desired, spread with glaze.
    Bake at 350 until browned - time will depend on size of ham.
    After ham is sliced, cover the cut area with reserved fat to keep meat from drying out.

    This recipe is from a wonderful friend and superb cook. I've enjoyed her country ham many times, but have
    not prepared it myself.
