    Banana Meatloaf

    Adapted from Treasured Southern Family Recipes

    Recipe Introduction

    When I saw bananas in a meatloaf, I really wondered how it would taste. But, since I had some over ripe bananas waiting to be used, I tried it and it was great. My family had no clue there were bananas in it.

    List of Ingredients

    1 1/2 lb ground beef
    1 tbsp dried onion flakes
    1 tsp salt
    1/4 tsp pepper
    2/3 c quick oats
    1 tsp dried bell pepper flakes
    1 tsp dried parsley flakes
    3 mashed bananas
    2 large eggs
    2 tsp prepared mustard
    1/4 to 1/3 c milk, as needed


    Recipe

    Mix all ingredients together and really work it until well combined. Add milk as needed.
    Shape into a loaf shape.
    Bake in a 375 oven for 1 to 1 1/2 hours, until done.

    If desired, top as you would your favorite meatloaf.

    Notes:
    I used dried flakes for onions, bell peppers and parsley.
    I used 3 small to medium bananas.
    I like to bake meatloaf on a raised rack so it does not sit in it's own fat as it bakes.
