Quick Chili Rice
List of Ingredients
1 1/2 lb ground beef (or turkey)
1/2 c chopped onion (or onion flakes will work)
1 tbsp chili powder ( I add more)
1/2 tsp dry mustard
1 c diced green pepper (or pepper flakes will work)
1 15 oz can tomato sauce
1 4 oz can sliced mushrooms, optional
1/2 c water
1 c instant (Minute type) rice
1/2 c shredded cheddar cheese
Recipe
Brown beef and onion in a skillet. Drain off fat.
Add spices, green pepper, mushrooms, tomato sauce and water. Cover and
bring to a full boil.
Add rice, stir well. Reduce heat, cover and simmer for about 5 minutes.
Sprinkle with cheese before serving.
4 servings.
I always double the rice, water and tomato sauce portion of this recipe. I've
used the dried flakes when camping and they work okay.
