    Adapted from a recipe in "Amish Home Cooking with Elsa"

    Recipe Introduction



    These are great! Good fresh from the oven or the next day.

    List of Ingredients






    4 tbsp butter
    1 1/3 c sugar
    2 eggs
    3 c flour
    2 tsp baking powder
    1/4 tsp salt
    1/2 tsp cinnanmon
    1 c milk
    2 c blueberries*

    1 to 2 tbsp cinnamon sugar for tops







    Recipe





    Preheat to 350.
    Cream butter, sugar & eggs together.
    Alternately add dry ingredients (flour, baking powder, & cinnamon) salt, with the milk, mixing well after each addition.
    Carefully stir in blueberries.
    Divide batter evenly between 18 muffin cups.
    Sprinkle cinnamon-sugar on top of each.
    Bake for 30 minutes.

    notes:
    I used unsalted butter, lowfat milk, large eggs and frozen blueberries.
    *if using frozen blueberries - rinse and drain well; toss with 1 to 2 tbsp flour.
    I used paper lined regular sized muffin cups; I sprayed the liners.
