    Great muffins!

    List of Ingredients




    1 1/2 c self rising flour *
    1 c chopped pecans
    1/2 c packed brown sugar **
    1 egg, beaten
    3/4 c milk
    1/2 c melted butter
    1/2 tsp vanilla

    Recipe



    Melt butter and let cool slightly.
    Preheat to 400.
    Combine flour, pecans and sugar, mixing well.
    Combine melted butter, egg, milk and vanilla.
    Add to flour mixture.
    Spoon into greased muffin cups.
    Bake for 15 to 18 minutes.
    Makes 12.

    Calories 233; calories from fat - 58%; Protein 3 g; Carb 22g; Fiber 1g; Fat 16g; Chol 41 mg; Sodium 292 mg.

    Notes:
    In place of self rising flour, use 1 2/c flour, 2 1/4 tsp baking powder, 3/4 tsp salt

    I used white sugar in place of brown sugar.
    I baked for 16 minutes.
