Cinnamon Crunch Muffins

List of Ingredients
2 c flour
1/3 c sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1 c chopped almonds
1 c buttermilk
1/3 c oil
1 egg
Topping:
1 tbsp ground cinnamon
1/4 c sugar
Recipe
Preheat to 400.
Mix flour, sugar, baking powder, baking soda and almonds.
Mix buttermilk, oil and egg, stirring well.
Pour wet ingredients into dry and stir with for until flour disappears.
DO NOT overmix - the batter will be lumpy.
Grease 16 muffin tins and fill 3/4 full with batter.
Sprinkle each muffin with 1/2 tsp of the cinnamon sugar topping mix.
Bake for 25 minutes.
Makes 16.
