Cinnamon Topped Oatmeal Muffins

List of Ingredients
Muffins:
1 c flour, sifted
1/4 c sugar
1 tbsp baking powder
1/2 tsp salt
3 tbsp cold butter
1 c quick cooking oats
1 3gg, beaten
1 c milk
Cinnamon topping:
1/3 c light brown sugar
1 tbsp flour
2 tsp cinnamon
1 tbsp melted butter
Recipe
Muffins:
Preheat to 425; grease 12 muffin cups
Combine flour, sugar, baking powder and salt; stir.
Add butter and cut in with a pastry cutter until it looks like coarse crumbs.
Add oats and mix well.
Stir in egg and milk until just moistened.
Fill greased muffin cups 2/3 full.
Topping:
Combine all ingredients and mix until well combined.
Sprinkle evenly on muffins.
Bake at 425 for 15 to 20 minutes or until muffins are well browned and firm to touch.
12 muffins
Notes:
I used unsalted butter, large egg and low fat milk.
I substituted sugar for the brown sugar in the topping.
Baking time was 16 minutes.
