    One Egg Muffins

    Betty Crocker, a 1937 recipe

    Recipe Introduction


    This is from my DH's grandmother's recipe box. The recipe is attached to a coupon which expired March 31, 1937. These are yummy muffins!

    List of Ingredients




    1/4 c butter flavor shortening
    1/4 c sugar
    1 egg, beaten
    2 c flour*
    1/2 tsp salt
    4 tsp baking powder
    1 c milk

    Recipe



    Preheat to 400.
    Cream shortening, then add sugar gradually.
    ADd well beaten egg.
    *Sift the flour and then measure 2 c.
    Then sift all the dry ingredients together.
    Add dry ingredients alternately with milk, beginning and ending with dry ingredients.
    Divide batter between 12 greased muffin cups.
    Bake for 25 to 30 minutes.
    Makes 12 muffins.

    Notes:
    I used butter flavor Crisco, a large egg and low fat milk.
    I baked 27 minutes.
    I added 1 c dried cherries to the batter.

    Variations:
    Fruit muffins - add 1 c chopped figs, raisins, dates, currants or candied orange peel to batter.

    Berry - add 1 c slightly sweetened fresh berries or 3/4 c well drained canned berries.

    apple - sift 1/2 tsp cinnamon with the dry ingredients.
    Add 1 c sliced apples which have been sweetened with 1/4 c sugar.

    Sour milk - use sour milk or buttermilk in place of milk. Add 1/2 tsp baking soda and reduce baking powder to 2 tsp.
