Garbanzo Casserole
List of Ingredients
1/2 lb pepperoni, sliced
2 whole chicken breasts (about 12 oz)
1 large onion, chopped, (about 1 c)
2 cloves garlic, crushed
4 medium carrots, peeled and sliced
2 c shredded cabbage
2 cans, 19 oz each, garbanzo beans, drained
1 can, 16 oz, tomatoes
1 tbsp salt
1 tsp thyme
1/2 tsp pepper
Recipe
Saute pepperoni in a large skillet for 5 minutes. Remove
Cut chicken into 2 inch pieces; brown in skillet. Remove.
Preheat to 325.
Saute onion and garlic.
Stir in carrots and cook 3 minutes.
Stir in cabbage and cook 2 minutes.
Add garbanzos, tomatoes, salt, thyme, and pepper.
Stir to blend well.
Add chicken and pepperoni.
Spoon mixture into a greased 3 quart container.
Bake for 1 hour, or until chicken is tender.
