Potato Salad

Recipe Introduction
A simple potato salad but one of our favorites.
List of Ingredients
3 medium potatoes
1 tsp sugar
1 tsp vinegar
1/2 c sliced celery
1/3 c finely chopped onion
1/4 c chopped sweet pickle
1 tsp salt
1 tsp celery seed
3/4 c mayo
2 hard cooked eggs, slicedRecipe
Cook potatoes in enough water to cover in a covered saucepan.
Boil about 25 minutes or until almost tender.
Drain potatoes; peel and cube.
Sprinkle potatoes with sugar and vinegar.
Add celery, onion, pickle, salt and celery seed; mix
Stir in mayo until well mixed.
Add egg and stir to combine.
Cover and chill.
4 servings
NOTES:
I use 4 potatoes and omit the eggs.
I omit the salt and use our favorite salt free herb blend.
