    More of a quick bread than a coffee cake.
    I recommend doubling the cinnamon and ginger for better flavor.
    This is a good bread and not at all heavy from the whole wheat flour.

    List of Ingredients






    1 large egg
    1 c milk
    1/2 c honey
    1/4 c oil
    1 c flour
    1 c whole wheat flour
    1 tsp salt
    1/2 tsp ginger
    1 1/2 tsp baking powder
    1 tsp baking soda
    1/2 tsp cinnamon
    1/2 c chopped pecans



    Recipe







    Beat egg until foamy. Add milk, honey and oil, mix well. Add dry ingredients, stirring until moistened. Add pecans and stir. Line the bottom of a 9 x 5 loaf pan with waxed paper. Pour batter into pan. Bake at 350 for 45 to 50 minutes or until done. Cool in the pan for 5 minutes. Turn out, removed waxed paper and cool on wire rack.
