    2 tbsp olive oil
    2 tbsp butter
    1 c rice - not instant
    1 c chicken broth (or water and chicken bouillon powder)
    1 c water
    1 tsp dried, diced carrots, if desired
    1/2 tsp dried, minced onion
    1/4 tsp celery seed
    salt to taste

    Recipe



    Heat olive oil and butter in skillet; add rice and stir.
    Cook until the rice is slightly browned.
    Add remaining ingredients.
    Bring to a boil, then lower heat and cook, covered, for about 20 minutes or unitl the liquid has been absorbed.

    Original recipe called for 3/4 c butter and no olive oil.
    Adjust carrot, onion and celery seed to taste.

    If preferred, use fresh carrots, celery but add after water has been absorbed by the rice.
