This cake sounds so good! I was thrilled to see it at the end of the book. Great book - good plot, entertaining characters.
List of Ingredients
Coconut Cake (from Phyllis Richman’s murder on the gravy train)
1 c milk
2 tbsp butter
2 c flour
2 tsp baking powder
¼ tsp salt
4 eggs
2 c sugar
2 tsp vanilla
Topping:
6 tbsp butter (3/4 stick)
2/3 c dark brown sugar
1 c (4 oz can) shredded coconut, (try to avoid using flaked)*
1 tbs vanilla
* shredded coconut gives the cake a crunchier texture
Canned coconut is more moist than bagged. Sweetened is okay
Recipe
Preheat to 350. Butter and flour a 9x13 pan.
In small saucepan or microwave dish, heat milk and butter to scalding. Set aside.
Thoroughly combine flour, baking powder and salt; set aside.
Beat eggs with electric mixer.
Add sugar and continue beating until thick and foamy.
With mixer turned on, gradually add hot milk, then vanilla
Beat in flour with mixer at slow speed.
Pour batter into prepared pan.
Bake at 350 for 30 minutes, testing after 25 minutes with a toothpick.
Cake is done when toothpick comes out clean. Cool slightly in pan.
Prepare topping:
Melt butter in medium saucepan or microwave.
Stir in brown sugar, then add coconut and vanilla.
Spread over top of cake as evenly as possible, making sure to reach corners.
Turn oven to broil and place cake 4 o 6 inches below heat.
Broil until bubbling and dark brown, turning if necessary to avoid browning.
Topping should be beyond golden, a definite brown but be careful as it can burn in an instant.
Let cool to room temperature and cut at serving time.
