The only recipe in "The Trouble with Too Much Sun, but it definitely has winning ingredients. This sounds refreshing and delicious.
List of Ingredients
2 lb ripe plum tomatoes, sliced lengthwise
1/2 bunch arugula - cut or tear leaves into small pieces
2 cloves garlic, minced
1/4 tsp red pepper flakes
1 large mozzarella, diced (no oz given)
8 sun-dried tomato halves, chopped
1/3 c olive oil
1 lb imported dried penne or spaghetti
salt and pepper to tasteRecipe
Heat the broiler.
Combine olive oil, garlic, red pepper flakes, sun-dried tomatoes and diced mozzarella in a large bowl.
Wrap a broiler pan with aluminum foil. Place the fresh tomatoes on the pan, then add salt and pepper.
Broil until edges turn black, about 10 minutes.
Add tomato slices to olive oil mixture.
Add arugula.
The sauce may be prepared a few hours in advance; best served at room temperature.
Cook pasta in salted, boiling water.
When pasta is al dente, toss with sauce ingredients.
The hot pasta will soften the mozzarella.
Eat and enjoy!
