    Italian-Style White Bean Soup

    This soup is absolutely delicious! And fast to prepare which makes it good for a quick meal.

    This recipe is attributed to Duane Daugherty.

    List of Ingredients




    1 lb ground turkey or chicken
    1 egg white
    1/2 c seasoned Italian bread crumbs
    salt and pepper to taste
    2 tbsp olive oil
    1 finely chopped medium onion
    4 to 5 minced garlic cloves
    1 can, 15.5 oz, cannellini or other white beans
    1 tsp chopped fresh thyme or 1/2 tsp dried
    1 tsp chopped fresh rosemary or 1/2 tsp dried
    1 pinch red pepper flakes
    4 c chicken broth
    1 to 2 c fresh spinach, chopped coarsely
    shredded Parmesan or Romano cheese

    Recipe



    Combine ground turkey, egg white, bread crumbs, salt and pepper. Mix well.
    Form into 1 inch balls.
    In stockpot, cook meatballs in olive oil over medium high heat, about 3 to 4 minuts.
    Drain.
    Add onion and saute 4 miutes or until translucent.
    Add garlic and cook 1 minute.
    Drain and rinse beans.
    Add beans, thyme, rosemary, red pepper flakes and chicken broth to stock pot.
    Bring to boil then reduce heat. Cover and simmer 5 minutes.
    Add spinach and simmer 5 more m inutes.
    Season as desired.
    Garnish bowls with grated cheese.
    4 to 6 servings.

    Notes: I used ground turkey, a large egg white and Parmesan cheese.
