    Butter (to grease the inside of baking dish)
    3/4 C water
    2/3 C light corn syrup
    2 C sugar
    1 t anise extract
    Red food coloring
    2 to 3 T confectioners sugar

    Recipe




    Butter and 8 inch baking pan, and set aside.
    In a large and heavy saucepan, combine the water, corn syrup and sugar.
    Bring to a boil over med. heat, stirring occasionally.
    Cover and cook for 3 minutes to dissolve any sugar crystals. Uncover and cook over med-high heat, without stirring, until a candy thermometer reads 300 degrees (hard crack stage). Remove from heat and add coloring and extract, and then pour into prepared pan.
    Using a sharp knife, score into 3/4" squares, and cool. Separate into squares, and roll in confectioners sugar, brushing off excess with pastry brush.
    Store at room temp in airtight container.
