    AUTUMN VEGETABLE BEEF SOUP


    1/2 lb. lean ground beef
    3/4 c. chopped onion
    2 c. hot water
    3/4 c. diced potato
    1 tsp. salt
    1/4 tsp. pepper
    1/2 bay leaf, crumbled
    1/8 tsp. sweet basil, dried
    1/4 tsp. chives
    1/8 tsp. garlic powder
    1/8 tsp. dried thyme
    1 (16 oz.) can tomatoes, drained
    2 carrots, thinly sliced

    Recipe




    Brown ground beef and onion. In large saucepan drain off fat. Add remaining ingredients. Bring to a boil and simmer, covered, 30 minutes or until vegetables are tender. Serves 4.

    Note: I used a whole bay leaf and did not crumble it. Since I am at home in Dallas and not at our farm, I did not have fresh herbs--except for chives which I bought at the grocery store.

    I also used more than 1/4 tsp of fresh chives.

    I highly recommend this soup!! it was surprisingly good considering how simple the recipe is.
