Banana Sour Cream Coffee Cake

1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed banana
1/2 tsp. vanilla
1/2 c. dairy sour cream
2 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. chopped nuts
1/4 c. sugar
1/2 tsp. cinnamon
Recipe
Cream shortening and 1 cup sugar until light and fluffy.
Beat in eggs, banana and vanilla. Fold in sour cream.
Sift together flour, baking powder, soda and salt.
Gently fold into creamed mixture, stirring just to blend. Mix together nuts,1/4 cup sugar and cinnamon.
Sprinkle half of nut mixture into
bottom of a well-greased 6 1/2-cup ring mold, tube or Bundt
pan; spoon in half the batter.
Sprinkle with remaining nuts; top with remaining batter. Bake at 350 degrees for 45 minutes, or
until cake tester comes out clean.
Let stand in pan on rack for 5 minutes.
Loosen around edges and turn out on plate.
Serve warm or cold.
Makes 1 coffee cake.
