    Black Bean Salad (Diana at MWL)

    2 15 oz cans of black beans, drained and rinsed
    1 1/2 cups frozen corn kernels
    1 cup chopped celery
    1 red bell pepper, chopped
    2 jalapeno peppers, membrane and seeds removed, chopped
    1/2 cup cilantro, minced


    Dressing:
    1/4 cup lime juice
    1/4 cup olive oil
    2 TBSP brown sugar
    1 TBSP Dijon mustard
    1/2 tsp salt
    1/2 tsp pepper



    Recipe




    Mix beans, corn, celery, red bell pepper, jalapenos, and cilantro together. Pour dressing over and toss. Chill one hour or up to one day.


    For dressing: Combine lime juice, oil, brown sugar, mustard, salt, and pepper in a jar and shake until blended.


    In addition to being a salad, this recipe works great as a dip for tortilla chips.
