    Blueberry Pecan Glazed Chicken

    Yield: 4 servings

    4 bone in, skinless chicken breasts

    Sauce:
    1 Tbsp diced onion
    1/4 tsp fresh garlic
    1 Tbsp butter
    1-1/2 cups blueberries
    1 Tbsp maple syrup (not maple flavored syrup)
    1 Tbsp chopped pecans
    1/4 tsp cider vinegar
    pinch salt and pepper pinch


    Recipe



    • Preheat barbecue on medium heat.
    • Grill chicken breasts, bone side down, for about 14 minutes.
    • Turn chicken and continue grilling until a meat thermometer inserted into the chicken reads 170 ° F (77°C) (about 10-14 minutes).
    • Sauté onion and garlic in butter for 2 minutes.
    • Add remaining ingredients, bring to a boil then reduce heat and simmer until sauce is slightly thickened.
    • Spoon sauce over chicken breasts and serve immediately.
