    Cold Blueberry Soup

    Yield: 4 servings

    2 cups blueberries
    1 1/2 cups water
    1/2 cup sugar
    1 lemon cut into ten slices
    1 small cinnamon stick
    1/8 teaspoon allspice
    1/8 teaspoon nutmeg
    1/2 cup fruity red wine (eg zinfandel or pinot noir)
    1 1/2 cups sour cream

    Recipe





    • Combine the berries, sugar, water, lemon and spices in a 1 or 2 quart pan and bring to a boil. Reduce the heat to a low simmer and cook for 15 minutes.
    • Strain the mixture into a bowl and refrigerate covered.
    • Just before serving mix in the wine and sour cream. Serve in chilled bowls, adding a few whole berries and a dollop of sour cream if you wish.
