After the 15 minutes of standing time -
On a lightly floured surface, using one ball at a time, roll dough into a large circle, keeping the dough very thin.
Use a donut hole cutter or a thimble to make a hole in the center of each circle.
Place circles on wax paper until all the dough balls have been rolled out.
Heat the oil, 1 inch deep in a 10 to 12 inch skillet (oil should reach 375 degrees).
Carefully place one bunuelo at a time in the hot oil.
Fry until puffed and golden brown on the bottom side, about 30 seconds. Use tongs to turn.
Brown the other side until crisp.
If needed, use the tongs to hold the bunuelos down in the oil to get them brown.
