    Buttery Shortbread Cookies

    1 3/4 sticks unsalted butter
    3/8 c powdered sugar
    2 1/2 tbsp sugar
    1/2 tsp salt
    2 c flour
    1/2 c cornstarch

    Recipe



    Preheat to 300.
    Combine butter, powdered sugar, sugar and salt in mixer at medium speed; beat until fluffy.
    Sift flour and cornstarch together; gradually stir into butter mixture.
    knead dough lightly until smooth.

    Press evenly into 9-inch round pan (springform is best).
    Score with a sharp knife across the top to make slicing easier;
    Prick with fork.
    Bake for 45 to 50 minutes or until golden brown.
    The edges ill be a little darker.
    remove from oven and cut along score lines.
    Cool in pan on wire rack.

    Notes: to decorate, press tines of fork around edge
