Candied Sweet Potatoes

4 medium sized yams or sweet potatoes
1/2 cup butter
1 1/2 tsp. fresh lemon juice
1/2 cup brown sugar
1/2 cup (4 fl. oz.) water
Recipe
Wash your sweet potatoes. Boil them in their skins, covered, for 10 minutes or until nearly tender.
Meanwhile, make up a syrup with the remaining ingredients, and cook it in a small saucepan over high heat until the syrup coats a spoon, about 3 minutes. Also preheat oven to 375 degrees.
When the sweet potatoes are cool enough to handle, peel them and cut them lengthwise in about 1/2" thick slices.
Lay them in a buttered shallow 2 quart baking dish.
Pour hot syrup over the potatoes and bake, uncovered, for 30 to 40 minutes or until light brown. Baste a couple of times during baking.
Add in some chopped nuts or top with marshmallows, if you like.
Notes: Some people like to sprinkle into the syrup mixture a little cinnamon or ground cloves, a little orange zest or nutmeg. It’s up to you how or if you want to flavor it.
