Chocolate Smothered Custard Slices

CHOCOLATE-SMOTHERED CUSTARD SLICES
50g (100ml) custard powder
150g (200ml) sugar
pinch of salt
550ml full cream milk
1 TBS margarine
1 TSP vanilla essence
2 large egg whites, stiffly beaten
200g (1 packet) cream crackers
2X200g milk chocolate
Recipe
Mix the custard powder, sugar, salt and 200ml milk together to form a smooth paste.
Bring the remaining milk (350ml) to the boil in a medium-sized pot.
Pour some of the hot milk over the custard paste and stir together, pour this back into the pot with the rest of the milk.
Heat over a low heat until the mixture thickens, remove from the heat.
Stir in the margarine and vanilla essence.
Ensure the custard mixture is cool before folding in the egg whites.
Line a shallow, square pie dish with three rows of cream crackers. Three across and three down.
Pour the custard over the cream crackers, leaving enough for another two layers, finishing with a layer of cream crackers on top.
Melt the chocolate and pour it over the cream crackers.
Use a fork to make lines across the chocolate and decorate with strawberries dipped in some of the chocolate.
Refrigerate, but remove from the fridge half an hour before serving to soften the chocolate and make it easier for cutting.
