LTLPHYL'S EASY CLAM CHOWDER

Yield: About 4 servings depending on appetites
• Cook 1/4 cup diced salt pork or bacon in frying pan until just golden brown [not dark].
• Add 1 small diced onion and simmer about 5 min.
• Boil 2 medium diced potatoes in 1 (8-oz) bottle natural clam juice until tender.
• Add salt pork or bacon if using, onion and pan drippings [you might not want to add all the drippings] to potatoes and clam broth.
• Add 1 (10-oz.) can whole Baby Clams or 2 (7-oz.) cans minced clams* undrained, 1/2 cup light cream, 3 cups milk and salt and pepper to taste.
• Cover and let stand over very low heat until hot. Do not heat over high heat or chowder may curdle or scorch.
*I prefer using canned Baby Clams to minced because the minced in my and the family's opinion are like chopped up pieces of rubber bands. Using whole Baby Clams brings it about as close as you'll get to the real thing we make in New England without steaming fresh clams.
