    1 c flour
    1 tsp baking powder
    1/4 tsp salt
    5 tbsp butter
    6 tbsp cocoa powder
    1 c sugar
    1 tsp vanilla
    2 large eggs
    1/2 c powdered sugar for rolling

    optional - 1/2 c finely chopped nuts

    Recipe



    In medium bowl, sift flour, baking powder an salt.
    In small saucepan, melt butter over low heat.
    Add cocoa powder and mix till smooth.
    Remove from heat, stir in sugar until combined (dark brown color)
    Pour into a large bowl, then add vanilla; add eggs one at a time and mix well after each.
    Add flour mixture; add nuts, if using.
    Cover with plastic rap and chill at least 2 ho urs.
    Dough will not be stiff but will form balls if cooled.
    Preheat to 400.
    Take a portion of dough at a time from the fridge;
    roll dough into 3/4 inch balls and then roll in powdered sugar. (coating hands with powdered sugar helps)
    Place on greased cookie sheet, 2 inches apart.
    Bake for 8 minutes; let cool 1 minute then remove from pan
    Store in air tight container.
    IF a crisper cookie is preferred, bake 9 minutes but watch so the bottoms do not burn.
    Makes 50 to 60 cookies
