This just sounds sooooo good.


List of Ingredients




Creamy Pineapple Dessert(Salad)

1(20-oz)can crushed Pineapple(drained)
Water
1(3oz)pkg.lemon jello
1 cup Heavy Whipping Cream
1/4 cup sugar
1 cup Cottage Cheese(small curd)




Recipe





Drain pineapple,reserving the juice.
Add enough water to the juice to make 1-1/3 cups;bring to a boil in a small saucepan.
Place gelatin in a bowl;add the boiling liquid and stir to dissolve.
Cool until slightly thickened.

In a mixing bowl whip cream;gradually beat in sugar,(add little at a time),beating until soft peaks.
Fold into the gelatine mixture.Gently blending.
Stir in pineapple and cottage cheese;blend well.
Pour into a 1-1/2 quart serving bowl.
Chill at least 3 hours or overnight.
Yeilw 8-10 servings.Recipe can be doubled.(Which I do).
