List of Ingredients
11/2 cups flour
1T sugar
1/2 t salt
1/2 cup vegetable oil
2T cold milk
1 t almond extract
topping:
3 T flour
1/2 cup sugar
5 T cold sweet butter, cut into small cubes
1/4 t salt
Recipe
crust
in an 8X8 pan or a pie plate, stir together
11/2 cups flour
1T sugar
1/2 t salt
whisk together:
1/2 cup vegetable oil
2T cold milk
1 t almond extract
and pour into flour mixture. mix with fork until blended then use fingers to gently pat it on the bottom and up the sides. don't worry if it seems really oily.
lay thickly sliced peaches or apricots in rows on top. you should need about five peaches or eight apricots. don't bother to peel them.
topping:
pinch together with your fingers until pebbly, then strew over fruit.
bake in a preheated 375 degree oven for about 35 - 40 minutes, or until the crust is nut brown and the juice is bubbling around the fruit.
if the peaches don't have much flavor, i marinate them in the juice of a lemon for a bit and then add some freshly grated nutmeg.
serve with vanilla ice cream or whipped cream.
