DAFFODIL SPONGE
1 pkg. lemon JELLO
1/2 cup sugar
1/4 tsp. salt
1 pint boiling water
2 eggs; separated *
2 Tbsp. sugar
Recipe
• Combine jello, sugar and salt with 3 Tbsp. water.
• Add egg yolks and stir well.
• Add remaining water gradually to temper eggs, stirring until JELLO is dissolved. Chill until slightly thickened. Beat until light and foamy with electric beater or rotary beater.
• Beat 2 Tbsp. sugar with egg whites until stiff. Fold into JELLO mixture.
• Turn into molds or a mold. Chill until firm.
