    DAFFODIL SPONGE

    1 pkg. lemon JELLO
    1/2 cup sugar
    1/4 tsp. salt
    1 pint boiling water
    2 eggs; separated *
    2 Tbsp. sugar

    Recipe




    • Combine jello, sugar and salt with 3 Tbsp. water.
    • Add egg yolks and stir well.
    • Add remaining water gradually to temper eggs, stirring until JELLO is dissolved. Chill until slightly thickened. Beat until light and foamy with electric beater or rotary beater.
    • Beat 2 Tbsp. sugar with egg whites until stiff. Fold into JELLO mixture.
    • Turn into molds or a mold. Chill until firm.

    * RAW EGG WARNING: Caution should be taken in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, it is recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
