Feta Stuffed Chicken Breasts

Servings: 4
4 Chicken Breast Halves, skinned and boned
¼ – ½ cup Dry Bread Crumbs With Italian Seasoning
¼ – ½ cup Crumbled Feta With Basil & Tomato
2 Tbsp Butter or Margarine, melted
3 cups Spinach, torn
½ cup Chopped Fresh Basil
1 Tbsp Balsamic Vinegar
1 tsp Olive Oil
â…› tsp Black Pepper
Recipe
Use flat side of meat mallet to flatten chicken breasts, between two sheets of heavy plastic wrap, to 1/4-inch thickness.
Dredge in breadcrumbs.
Spoon cheese on each piece of chicken and fold in half. Close with toothpicks, if desired.
Place in baking dish coated with nonstick spray.
Drizzle with margarine; bake at 400 degrees about 25 minutes or until cooked through.
Combine spinach and basil; drizzle with vinegar and oil; add pepper, tossing to coat.
Arrange greens on four plates; place chicken over salad.
Helpful Tips:
You may add garlic to the cheese mixture and/or to the salad, if you wish.
