Recipe Introduction
This is the only recipe offered in Girdner's book, "A Sensitive Kind of Murder". Her book includes many descriptions of vegetarian foods and I wish she included more of the recipes. I'll translate the recipe into cooking terms but if you get a chance to read her book, be sure to read the recipe. It's very entertaining reading!
List of Ingredients
1 tbsp sesame oil
2 tsp crushed garlic
1/4 tsp chopped ginger
1 handful fresh basil
1 bunch green onions
1/2 c broken red bell pepper bits
2 tbsp maple syrup
1 tbsp soy sauce
1/4 c apple juice (or sherry)
1/2 c eggplant
1 c mushrooms, sliced
1/2 c zucchini, chopped
1 lb cut and marinated tofu
1 tbsp hot and sweet mustard
Recipe
Chop the zuchini and eggplant.
Rinse mushrooms, scrub then chop.
Place tofu in your favorite marinade, then chop.
Put sesame oil in skillet; scald.
Add garlice, ginger, basil, green onions, bell pepper, maple syrup, soy sauce and apple juice (or sherry).
Saute.
Add eggplant, mushrooms, zucchini and tofu.
Cook until vegetables become limp.
Stir in the mustard and serve over soba noodles or rice.
Serves 4.
