Fresh Fruit Gazpacho

List of Ingredients
1 tbsp minced jalapeno
1/8 c minced red onion
2 tbsp minced fresh mint
1 tsp mince fresh ginger (or a pinch of powdered ginger)

1 quart fresh squeezed orange juice
2 c mango nectar
juice of 1 lime

2 c diced watermelon
2 ripe nectarines
1 c fresh pineapple
1 pint strawberries
1 c halved grapes
1 pint fresh blueberries
2 peeled and seeded cucumber

1 can ginger beer or 12 oz sparkling cider
honey to tasteRecipe
Combine jalapeno, red onion, mint and ginger in a large mixing bowl or pitche.
Add orange juice, mango nectar and lime juice.
Refrigerate while preparing fruit.
Add prepared fruit to mixture in bowl and refrigerate until serving time.
Add beer or sparkling cider.
Top with drizzle of honey, then serve.
