Glazed Chicken

Serve with three flavor rice.
List of Ingredients
Marinade:
3/4 c honey
1/2 c orange juice
1/4 c soy sauce
1/4 c fresh lemon juice
1 tbsp finely minced garlic
1 tbsp minced fresh ginger
1 - 3lb chicken
2 scallions, thinly sliced for garnish
Recipe
wash chicken. Cut into 8 pieces, rinse and pat dry.
Mix marinade ingredients together in a bowl.
Add chicken to marinade, coat well and set aside for 2 hours at room temperature.
Preheat to 350.
Prepare a baking dish large enough to hold chicken.
Place chicken in dish and carefully drizzle with about 1 cup of marinade.
Bake for 15 minutes then baste with marinade.
Continue baking and basting every 15 minutes until the chicken is cooked, about 1 hour.
Place chicken on a serving plate.
Pour juices into a saucepan and cook over medium heat to thicken, about 12 minutes.
Drizzle reduced juices over chicken and garnish with scallions, if desired.
Serve with three flavor rice.
