This is a variation of the ever-popular Gooey Butter Cake. I found it in one of Paula Deen's cookbooks and tried it yesterday. It is absolutely divine. If you make it, cut it in very small pieces, as it is very rich!
GOOEY CARROT CAKE
1 pkg. carrot cake mix
4 eggs, divided
1 stick (1/2 cup) butter, softened
8 oz. cream cheese, softened
1 lb. box 10X confectioners’ sugar
1 cup finely grated carrots
1 cup pecans, chopped
1 tsp. vanilla extract
Recipe
Mix cake mix, 2 eggs, and butter. Pour into a greased 13- x 9- x 2-inch baking pan. Mix cream cheese, confectioners’ sugar, 2 eggs, grated carrots, nuts, and vanilla with mixer and spread over batter in pan. Bake at 350° F. degrees for 45-50 minutes. Dust with confectioners’ sugar.
