    Hearty Beef Barley Soup

    List of Ingredients




    1 lb beef (sirloin or top round) cut in 1 inch cubes
    2 c sliced mushrooms
    1/4 tsp garlic powder
    32 oz beef broth (3 1/2 c)
    2 medium carrots, sliced
    1/4 tsp thyme
    dash pepper
    1/2 c quick cooking barley

    Recipe



    Cook beef until browned and juices evaporate; stirring often
    Add mushrooms and garlic; cook until tender
    Add broth, carrots, thyme and pepper
    Heat to a boil.
    Stir in barley.
    Cover and cook ove low heat for 20 minutes or until barley is done.
