    Shugga's note: Joey Marquez was a student of mine and on international day his mom brought this to school. She called her Irish relatives to get the recipe!

    List of Ingredients




    Irish Raisin Cake

    4 1/2 cups flour
    1 teaspoon baking soda
    1 teaspoon cream of tartar
    8 ounces butter or margarine
    1 pound raisins
    1 1/4 cup sugar
    3/4 cups buttermilk
    3 eggs

    Recipe



    Combine flour, baking soda, and cream of tartar.
    Cut in butter until crumbly (use hands or 2 knives).
    Add in sugar and raisins.
    Beat eggs.
    Add buttermilk and eggs and mix well with dry ingredients, to form a stiff dough.
    Put into an 8" round greased pan.
    Bake at 425 degrees F. for 15 minutes.
    Reduce heat to 325 degrees F. and bake for 1 - 1 1/4 hours until knife inserted in middle of cake comes out clean.
