    Manicotti Enchiladas ann sanders

    14 pieces Manicotti, uncooked
    1 lb. ground beef
    1 med. onion, chopped (1 cup)
    1 green pepper, chopped
    1 4 oz. can chopped green chiles, drained
    3/4 cup sour cream, divided
    1/2 teaspoon salt
    16 z. jar mild picante sauce heated
    1/2 cup shredded cheddar cheese
    1/4 cup sliced red onion, or green onions

    Recipe




    Prepare pasta according to the package.
    While pasta cooking, saute beef onion an green pepper in a large skillet until browned; drain well.
    Stir in chilies, 1/2 cup sour cream ad salt.
    When pasta is done drain well.
    Fill manicotti with beef mixture.

    Preheat oven to 375.
    Spread 1/2 cup picante sauce over bottom of a glass 9x13 baking dish that has been sprayed with cooking spray.
    Place filled manicotti side by side o top of sauce.
    Pour remaining sauce evenly over manicott.
    Sprinkle with cheese.
    Cover with foil and bake for 20-25 minutes or until thoroughly heated.
    Garnish with remaining sour cream and green onions on tho. Serve immediately Serves 7
