    1/2 c butter (1 stick), room temp
    2 c sugar
    2 large eggs
    2 c buttermilk*
    2 1/2 c flour
    2 tsp baking soda
    1/2 c cocoa powder
    2 tsp vanilla
    1/8 tsp salt

    Frosting:
    1/3 c cream cheese, room temp
    1/4 c butter, room temp
    1 tsp vanilla
    2 c powdered sugar

    *sour milk will work as a substitute for buttermilk. to make sour milk, combine 2 tbsp lemon juice with milk to make 2 cups

    Preheat to 350.
    Grease and flour pan(s) - choose size (one 9 x 13 /or 2 9-inch round or/ 3 8-inch round pans.)
    Cream together butter and sugar until fluffy.
    Add eggs; beat well.
    Alternately add buttermilk with the dry ingredients.
    Mix well.
    Pour into pans and bake -
    9x13 for 40 to 50 minutes
    8 or 9 inch round pans for 20 to 25 minutes
    Test cake by touching center and see if it springs back.
    Cool completely before frosting.

    Frosting:
    Beat together cream cheese, butter and vanilla. Beat until fluffy.
    Add the powdered sugar gradually and mix well.
    spread on cake.
