Oyster Stew

PHYL'S OYSTER STEW

Yield: 4 servings
This is not of a thick consistency or is it meant to be. (more like a soup then stew but stew is what it is called.)
8 ounces oysters, canned
2 tablespoons butter
2 cups milk, hot (Occasionally I'll substitute 1 cup milk and 1 cup half & half.)
salt and pepper, to taste
Recipe
• Heat oysters in their juice just until they begin to curl. (Like any other shell fish if you over cook them they will become rubbery.)
• Add hot milk.
• Serve steaming in bowls, garnished with paprika if desired.
• Pass oyster crackers if desired. (If I don't have oyster crackers on hand crumbled Saltine crackers on top of a bowl of stew work just as well.)
